Slippery pigs

Isn’t it meant to be one of those classic amusing farm challenges – to catch a greasy pig?

With all this rain it was muddy on Monday as a clique of chefs arrived at Redleaf Farm to catch piglets. It was pretty funny watching!

Sam led the catching team in the pen, and then passed them over the fence to the waiting trailer.

For small animals they are incredibly strong – writhing balls of lean muscle, and hard to hold on to. And they sure can squeal!

They are still quite cute (it is sad to see them go…) – but suckling and grazing on clovers – and plums – makes their meat taste amazing.  These ones will be on James Viles (above) menu at Biota in Bowral.
